Had my mind blown by the tasting menu at i Banchi, a restaurant from Michelin Star chef Ciccio Sultano, in Ragusa Ibla. So many new flavors for me, and now I can check off the list a few foods/dishes I’ve never had before: sea urchin, raw white shrimp, octopus with black olive shavings, cuttlefish ink spaghetti in sanapo herb sauce, mushroom ice cream sandwich (!!!), and pork with chocolate and candied apples. Just awesome.

Last chapter of our Danish food adventure: I'm generally a bit squeamish when it comes to raw meat/eggs, but when a cooking festival serves you a tartar smørrebrød with a raw egg on top and all the Danes around you are gobbling theirs up at lightning speed, well, you don't dare turn it away. It actually was quite delicious (when I overlooked what exactly I was eating), and it was especially fantastic with the IPA and aquavit pairings to help wash it down.

This includes a crash course in shipbuilding, followed by "feasting" like a Viking – ingredient wise, that is, minus the coffee and sugar, which took another 3-5 centuries to arrive in Denmark – then ‘swimming’ by bike 75km through the cold, down-pouring rain to our next destination.

I'd read about this old, half-timber cottage restaurant on Esrum Lake that served "beautiful small plates," so it seemed like a nice place to stop today for a light lunch along our cycle route. I ordered the spiced herring, because what's that? Holy cow, what a flavor explosion! The herring was served with capers and a vinegar reduction w/ ground cloves, pickled onions, fresh dill, cress and flower petals, purple potato chips, soft-boiled egg, and of course fresh-made bread with crunchy lard to spread. MIND BLOWN.
